Ethan grew up in Seattle and is a self-taught chef. He was named one of Food & Wine's Best New Chefs in America in 2008 and has been nominated for more James Beard Awards than he cares to remember. He opened Union in 2003 and hasn't looked back, now with more than 10 Seattle establishments to his name, including Tavolata, How to Cook a Wolf, and his latest, Goldfinch Tavern at the Four Seasons.
